I don't know if this can be done or how involved it would be, but once FoF online multiplayer is developed, would it be possible to somehow allow FoF users to connect to 360/PS3/Wii users via online multiplayer to allow them to play with us? In other words, could I, running FoF, could play online with my friend who has a 360 or PS3?
Spontaneous idea, don't know if it's good or bad so I figured I'd ask anyway.

The short answer is that it would not be possible without either hacking those console networks (and facing the harsh consequences) or getting their blessing and assistance in setting it up. I doubt either will happen.

I don't know if you would have to go through PSN, XBOXlive or Wii servers. You just connect outside servers via http protocol. It's getting FoF to work on each console is the sticking part.
I actually found out about Frets on Fire from instructables which had a tutorial on hacking Wii version of Guitar Hero 3.
PS3s usually jailbroken to run stuff. Still a user on the PSX-scene forum thinks it would take a group of programmers a year or two to translate FoF to the PS3.

not to mention fof is essentially dead, it will probably never have online to start with.

This is only possible if, you got the Frets on Fire rights, developed and sold it on the consoles. But the limitation would be, you would have to license songs and packs to play in the game AND you'd have to sell them.
