Re: Wireless controllers
You can, as long as you have the dongle to connect to the PC.
PS3 instruments have a USB dongle and work fine.
PS2 instruments have a PS2 controller port dongle, so you need an adapter for that.
XBox 360 instruments need a dongle that you can buy from shops (usually packaged with an extra XBox 360 controller and marketed as an XBox controller for Windows).
Wii instruments are a bit of a pain, but connect via bluetooth and map buttons via an external program named GlovePIE.
So yeah, you can use wireless guitars and drums.

Re: Wireless controllers
You can via bluetooth, but no OS I know of has built-in wiimote drivers, hence the need to use a 3rd party program like GlovePIE
EDIT: Actually, Rock Band instruments should work, because they use a USB dongle IIRC. It's just the GH ones that connect via Wiimote/bluetooth.
EDIT2: I think the same goes for other consoles, too. Basically if it has a USB dongle you're good to go, otherwise you may need an adapter depending on the console the instrument id for.
