isn't there an easier method, like when you press certain key on your keyboard it adds, like
press 1 for yellow, press 2 for red, etc
it would be much easier =)

EOF does that, just not by default. You can change it by opening File>Preferences and setting the input mode to "Rex Mundi". Make sure to check the documentation, which is available in the help menu, it will help you get the most out of using the chart editor.

why is there not beat added then when i press 1-5 on the EOF editor when playing the song?

Only some of the input modes allow you to place notes while the song is playing, but keep in mind that placing notes while the chart is playing will result in a bad chart unless you correct it afterward by moving/anchoring the beat markers and correcting note positions as necessary. If you want to do it anyway, you would need to define the keys for placing guitar and drum notes in File>Controllers and then change your input mode to either guitar tap or guitar strum. Make sure to read the manual, it covers this. I'd also recommend you check out the tutorial as well.
