When I first started with fofix I usually played guitar hero on medium. However most of the songs on here that I really wanted to try are only in expert, so I had to learn under fire so to speak lol. Truth be told I really learned with the Puppetz Hero series (because it had hard and expert both) , and Angevil's heroes as well as Testament's Practice what you preach album (By Vedicardi I believe) once I became comfortable with playing on expert.

I pretty much started playing on expert and could beat most songs if just barely. Once I got used to reading the game (this is really where the original difficulty lies) I started playing harder songs etc etc. Then I set a goal 5 star all on disc songs and most obtainable DLC. Basically I broke the wall when I 5 starred Raining Blood (GH3 chart). Just recently I started playing GH3 customs, and so now I'm going back and blowing all my old scores out of the water. Just today I went from 520k something on Devil to nearly 600k!

I actually played FoF songs on whatever difficulty they came in...so I never really worked my way up...I just went with the flow.
